Total SO2 is a measurement of all SO2 in wine, including its bound and unbound forms. Bound SO2 does not have the same antioxidant or antimicrobial functions as unbound "free" SO2, so winemakers can achieve a lower conversion of Free SO2 to Bound SO2 by timing additions carefully throughout the wine production process and preventing compounds like free anthocyanins and aldehydes from binding to them.
